Paolo Polidori is a full professor of Animal Feeding and Nutrition; he is very competent about animal source foods, such as milk, meat, and eggs. Most of these foods are widely used in infant nutrition, especially milk, which is the main food in children's diets.
He believes that it is essential to describe nutritional quality parameters in animal source foods adequately to avoid the risk of transforming children into herbivores, replacing milk with plant beverages, i.e., soy milk, almond milk, etc.
